A: As finicky as it might seem, peeling peppers is a great way to ensure a delicate texture in the finished product. Peppers' skins, when cooked, tend to toughen up and tighten, so you're best-served peeling them before they get a chance to do that. There are a couple ways to do it. One way is to use one of those new, serrated vegetable peelers on the market. They've got tiny little teeth that can peel away the tough skins without damaging the tender interior - they're great for peaches, peppers, and even grapes (on the off chance you have grapes to peel).
