Whether your favorite is New York style or Chicago style, pizza is likely at or near the top of your favorite dish list. What few outside of the culinary profession know is that pizza is also fun to make, as the following recipe for Palermo Pizza from Maxine Clark's Pizza, Calzone & Focaccia (Ryland, Peters & Small) can attest.
PALERMO PIZZA
1/3 C olive oil, plus extra to drizzle
1 large onion, sliced
3 large ripe tomatoes, chopped
1 tsp. dried oregano, plus extra to taste
8 anchovy fillets in oil, drained and chopped
1 C dried bread crumbs
2 1/2 oz. dried caciocavallo (or Emmental), cubed
Sea salt and freshly ground pepper
2 recipes Sicilian Pizza Dough, making indicated changes
1/2 cake compressed ...
