Who can say why "chvre" outsells "goat's milk cheese"?
Perhaps it's all in the name - no kidding! Chvre, of course, IS goat's milk cheese, and only one of many varieties.
Even within the chvre category, there are different styles, shapes and flavors. When very fresh and young, chvre is incredibly mild and creamy, typically sold in small tubs or cellophane-wrapped logs or rounds. Controlled aging results in a stronger-tasting, drier cheese.
