I recently attended a blind tasting of Trappist and Abbey-style ales.
An impressive group of 25 beers had been assembled for sampling - a somewhat daunting task for a lunchtime session. My fellow panelists were of the sommelier type: They spit rather than swallowed their sips. But to any self-respecting beer lover, the swallow is all-important, so I soldiered on alone.
When the samples were whittled down to 10, I was happy to see that the beer that earned my highest score, the only one I thought worthy of four stars, ...
