SHRIMP CREOLE

2/3 cup chopped onion

1/3 cup chopped green bell pepper
1 cup chopped peeled and seeded tomato
1 clove garlic, minced
1 teaspoon chopped parsley

1/2 teaspoon paprika

1/4 teaspoon dried thyme

Pinch cayenne

Freshly ground black pepper to taste
6 ounces peeled raw shrimp
1 cup hot cooked white rice

Cook the onion and bell pepper in a saucepan over medium heat for 2
minutes, stirring frequently to keep from sticking and to ensure uniform
