The founding patrons of the City Tavern would probably be quite surprised at who's running the inn these days. Behind the scenes recreating America's culinary past is Executive Chef Derek Banks, a man both ethnically and culturally of African descent. The first African-American and possibly youngest person to ever hold that position, the 29-year-old Banks is the centerpiece of a renaissance for this very old and historical establishment.
