LINDA WERTHEIMER, Host: Dessert analyst Jerry Stern.
STERN: The four of us at the table sigh with satisfaction and self-
celebration at going to a real restaurant with tablecloths. The waitress
approaches. She's been polite and professional. She authoritatively
described the specials and nodded affirmatively with each choice as
if to recognize our remarkable good judgment. She has served with
efficient calm.
But now, as she comes to our table, her face is different. She looks
