Many people have written or telephoned to ask me about the origins of and the “correct” way to make Bechamel sauce.

Named after Louis de Bechameil, this simple sauce is crucial to fine cooking. What is odd, however, is that no one is quite certain precisely who invented the sauce that carries Bechameil's name.

What is known is that after the uprising of the aristocracy and the French parliament against Mazarin in 1648, Bechameil, who was the Marquis of Nointel, became the economic adviser to King Louis XIV.
