Antoine Beauvilliers was a great chef, a superb restaurateur and a man so enamored of his own talents that many considered him an egomaniac.

After serving as head chef in the kitchens of the Count of Provence (later King Louis XVIII), Beauvilliers decided that he no longer wanted to work "as a servant" and made the daring move of setting up a formal dining-out place for the elite.

Most historians concur that his establishment, the Grande Taverne de Londres, was the first true restaurant in Paris.
