Thursday, August 2, 2001 -- Vinegar production is part of the history of wine- making, when conservation conditions were nonexistent and wine turned into vinegar within a short period after fermentation. Vinegar can be made from any fruit containing sugar which converts into alcohol via fermentation, but vinegar produced from grapes is aromatic, complex and versatile, a wonderful complement to many fine foods.
The French word for it, made up of vin (wine) and aigre (sour), is a direct descendant of its Latin equivalent.
