NSW: Buffalo cheese makes debut at dairy show
SYDNEY, Feb 11 AAP - Buffalo milk products appeared on the rich
platter of farmyard
delights at Australia's peak cheese and dairy show for the first time
today.
Judges at the Sydney Royal Cheese and Dairy Produce Show put their
palates and noses
to work for the cheese judging to find the best cheddars, bries, cottage
cheeses as well
as sheep, goat and buffalo milk products.
International judge Randolph Hodgson from Neal's Yard Dairy in
the UK said the taste
that lasts was often more important than the initial bite.
He joined the judging team with mixed appraisals of Australian
cheeses.
