Friday, March 22, 2002 -- There is an abundance of kosher-for-Pessah
food products on the market. But if one is a vegetarian, the list
grows shorter. A vegan who, in addition to the vegetarian¹s stringencies
does not eat dairy products or eggs, has an even harder time during
Pessah. And if one is a vegetarian or vegan of Ashkenazi extraction
and does not eat kitniyot (beans or seeds that resemble grain and
must be cooked in order to be eaten during Pessah), then the list
of permitted foods is even further reduced. To the rescue comes quinoa.
