Back in the old days before I was watching calories and fat like
a stage-hungry celebrity, I believed that angel food cake, fluffed
up with egg whites and nary a yolk, was a poor excuse for a dessert.
But I've come around.
I believe in egg whites and their exquisite power to contribute
to perfectly delicious desserts, ones that boast few calories and
minimal fat as much as good looks and taste.
It helps to approach egg whites' charms with an excellent cookbook
packed with flavorful recipes from real chefs rather than from the
amateur calorie-cutters determined to make an unadorned chicken breast
sound appetizing.
