Now that we're heavy into salad season and have learned the basics of lettuce language ("Phyllis' Tips," April 23), it is a good idea to look at other great salad possibilities.

Salads don't just have to be side dishes. In warmer weather, a salad can take center stage as the main dish, depending on what you put in it.

Every vegetable brings its own character to a salad. Salads should be colorful and attractive. For example, a classic green salad also contains red lettuce and radicchio, a red vegetable that looks like a cross between lettuce and cabbage. The fresher the vegetables, the better the salad will look and taste.
