Contrary to its name, buttermilk contains no butter.

I found myself telling this food fact to a home economist at a dairy that produces buttermilk. She insisted I was wrong; I insisted - as politely as I was able - that I was right.

I contacted her when a reader, Kathleen Becker of Oradell, asked the difference between buttermilk and "light" buttermilk.

Becker wanted to bake Irish soda bread from a recipe that called for buttermilk. But when she went shopping she found only "light" ...
