CHEESE SPONGE CAKE with COFFEE ICING 4 large eggs, separated 100g caster sugar

Sifted together: 100g plain flour 1 tsp baking powder 50g finely grated cheddar cheese

COFFEE ICING 350g icing sugar, sifted 200g butter, at room temperature

Mixed 2 tbsp hot water 2 tsp instant coffee
