THE FOOD MAVEN: A Robust Ukrainian Cousin to the Cosmopolitan Crepe
My introduction to blintzes took place on the Lower East Side at a dairy
restaurant where both the waiter and the cook were named Moishe. My father
and I had stopped in for a quick lunch on our way to buy me a typewriter,
and little did I suspect what was in store when I ordered the specialty of
the house, freshly made cheese blintzes. At that point in my life,
mid-adolescence, I had only ever eaten frozen blintzes, the kind with the
