Did you know? Surprising evaporated milk

First produced in 1899, Carnation Evaporated Milk originally provided a
safe, dependable source of whole milk when fresh milk was not always
available and before refrigeration became the norm in every household.
Evaporated milk was made by gently cooking whole milk in order to
concentrate the milk solids and sterilize it, thus providing the country
with a clean supply of milk. Carnation maintains that same cooking
tradition today. Evaporated Milk now also comes in lowfat or fat free
varieties and has remained an essential pantry item because it's always
