Q: I HAVE enclosed a recipe for Pineapple Custard Topping for layer cakes. I need a recipe for a 23cm sponge cake that uses either self-raising flour or plain flour for the topping.

PINEAPPLE CUSTARD TOPPING
1 tin pineapple cubes

50g cornflour

Mix together:

800 ml coconut milk

one grated coconut

1/2 tsp yellow colouring.

1 tsp pineapple flavour

1 tspful agar-agar powder and 1 tspful Hoen Kwee flour
