WE made our acquaintance of Michelin-star chef Stephane Gaborieau expertly handling a giant (weighing 8kg!) deep sea crab from Australia. It looked inert but it was alive, as I saw an eye flicker!
We were at the Pacifica Grill at the Mandarin Oriental, Kuala Lumpur, and the chef waved a crab claw at us, after preparing some dishes for our photography session.
Gaborieau, who could speak little English, had a brief conversation with us, painfully helped ...
