THE secret to baking a light, fluffy sponge cake is to beat lots of air into the egg and sugar mixture. Then, gently fold in the flour, taking care not to over-mix or you will knock out the air you've already beaten in, says Betty Saw in response to a question by a reader.

The reader had written in to say that she wanted to make a sponge cake like what you can get in the shops, especially in a birthday cake.
