WHEN guest master chef Nick Ma Meng was invited to prepare the famous Beijing dish, Peking duck, at the Toh Yuen Chinese Restaurant of PJ Hilton, he brought with him a secret recipe that was more than 100 years old.

Ma used herbs and spices that were specially flown in from China for the restaurant's Peking duck promotion, which ends on Sunday.
"This exotic method of cooking the dish is from a famous restaurant, Pian Yi Fang, in Beijing which has been in business for more than a century," he said.
