Your leftover Thanksgiving turkey is calling to you. "Eat me," it's saying.
So off you go, to the refrigerator. Your stomach growls with anticipation. You will liberate the turkey from its plastic container. You will cause it to feel the gnash of your powerful teeth.
You will - drumroll, please - eat it.
But when you open the Tupperware, you recoil: dry, crusty sinew hanging from grayish bone. That bird smell. Blecch.
Never fear, Chef John ...
