Q: I HAVE been making cookies for the Chinese New Year using only egg yolks. What can I do with leftover egg whites and what is the weight of two egg whites?
A: IF you have leftover egg whites, you may like to make Crisp Meringue Fingers or a no-cholesterol souffle using egg whites only. Here is a recipe for Crisp Meringue Fingers.
