In France, an institution is under attack. For more than a century, the Michelin Guide to Restaurants has been the road map to food heaven. Each year, Michelin squads of undercover inspectors keep chefs around France trembling. The annual rating, according to Michelin's fabled three-star rating system, can mean glory or disaster.
