Everybody knows you cannot have a cheeseboard without Stilton, so
I always do it - and I, like most other people end up with a chunk of
it wrapped in clingfilm in the fridge and when the smell gets too bad
out it goes in the bin. Having a "waste not, want not" policy in our
household, I have discovered what a wonderful cooking ingredient
Stilton is; great in soups, wonderful in sauces, deliciously
different in risotto and excellent for an upmarket pizza.
I did not know that Stilton is only made in three counties -
Derbyshire, Nottinghamshire and Leicestershire - and by law cannot
be made anywhere else, and that just seven small creameries in these
counties are licensed to make Stilton by ...
