My faith in the power of fashion to change minds and tastes has
been restored. Fava beans have become the foodie bean de rigeur.
What Italian cookbooks write up, we lap up. It's been fava beans in
falafel, fava beans in tuna sauce, fava beans with pecorino cheese,
fava bean salad blah blah blah for a year or so now, and not one
person in the know spilled the beans as it were, to say they have
been here for years under another name. So to all those who say yuck
when offered broad beans, yet bang on about the tender flavours of
fava beans, I'd just like to say: "Us long-time broad-bean
connoisseurs are laughing at you".
