Most of us aspire to spend our summertime, George Gershwin-style, where "the living is easy." And nothing feeds those playful, lazy days better than American comfort food.

Comfort food does what its name implies. It comforts. It cheers. And it tastes good. Comfort food is simple fare, the food of home and family.

It is easy to recall the comfort foods of summer. They are the soul-satisfying dishes that childhood memories are made of - potato salad, corn on the cob, cornbread, fresh fruit salad, a perfect hamburger, pink lemonade.

In an age where haute, nouvelle and fusion cuisine are revered, culinary professionals have not taken comfort food very seriously.
