Pizza Dough
Students' Basic Recipe
5 cups all-purpose flour
11/2 teaspoons salt
1 package RapidRise yeast
2 cups water
1/4 cup olive or vegetable oil
Combine flour, salt and yeast in large bowl. Heat water and oil to
130 degrees. Add to dry ingredients and beat 2 minutes at medium
speed of electric mixer, scraping bowl occasionally. Beat 2 minutes
at medium-high speed, scraping bowl occasionally. With spoon, stir in
enough additional flour to make a soft dough. Knead on lightly
floured surface until smooth and elastic, about 4 to 6 minutes. Cover
and let rest 15 minutes. Shape and bake according to selected recipe.
Enough to serve 12.
Note: Pizza dough needs a hot oven, 400 degrees or higher.
