Article: Apple Pie: A Slice of America's Past

What is it we Americans have about apple pie? During the past two years, while traveling the country and researching a book on American desserts, I have found that nearly every home baker has a special recipe, a reminiscence, an opinion - above all, an attachment.

But why? Enlightenment, perhaps not profound but of a sort, finally came to me in Boulder, Colo., where I served as a judge for a pie contest. I took nibbles from dozens of pies, ranging from classic lemon meringue to updated black bottom (with raspberry liqueur instead of the traditional rum), and while all of them struck me as good enough, none seemed a winner.
