Sauvignon blanc, the wine most associated with spring but enjoyed
year-round, is ubiquitous in nearly every wine growing region.
Although not a darling of consumers, it offers a lot of citrus and
gooseberry flavors that are often overlooked in a thirst for anything
chardonnay.
The variety's most significant threat is its grassy characteristic
that unfortunately is too pungent for many consumers. In its worst
form, sauvignon blanc can be too herbal and vegetal - largely a
result of vigorous growth and unripened grapes. Many winemakers add
semillon grapes to soften the natural tartness of the wine.
