Soon to be featured on many Thanksgiving tables are sweet
potatoes - the No. 1 vegetable, according to the Center for the
Science in the Public Interest, a Washington consumer group.
They earn this distinction for containing five times the
recommended daily allowance (USRDA) of beta carotene, which is
converted by the body to vitamin A - a nutrient that seems to play a
role in cancer prevention. In addition, one medium sweet potato -
sometimes called a yam - has half the USRDA of vitamin C and is a
good source of fiber, even without the skin.
