MONTFORT, Wis. - Wisconsin has Packers green and gold, Badgers red
and now Montfort blue.
The first batch of Montforte Dairy Blue Cheese was made last month
in the first cheese factory owned by the Wisconsin Farmers Union
Specialty Cheese Co. Blue cheese is a niche market with a predicted
steady growth in demand of 5 to 10 percent per year, said plant
manager Tim Pehl.
"It's very temperamental because you add the blue mold culture,"
Pehl said. And because the culture could affect other cheese
starters, the plant is dedicated only to blue cheese.
"We're not a plant that has its own patrons," Pehl said. "Our
supplier (Scenic Central Milk Producers) is going to build his route
as we ramp up ...
