LANCASTER, Wis. - Wisconsin's dairy goat industry is already
booming, and with more than half of the state's producers looking to
expand their operations, goat milk production will only continue to
increase.
News of a major goat cheese plant scheduled to open in Lancaster
next fall is bringing much attention to the southwest corner of the
state.
In June, officials from Woolwich Dairy Inc., Canada's leading goat
cheese producer, announced plans to build its U.S. headquarters in
Lancaster. Corporate officials said they chose Lancaster because of
its central location, history as a quality farm area and capability
to provide the amount of goat milk the plant will need, about 1
