At 21st Street Coffee and Tea, every cup of coffee is a custom
order.
The Strip District coffee shop recently acquired a Clover brewing
machine that combines features of both French press and vacuum
brewing. The system takes an order from bean to brew in 90 seconds or
less.
"Coffee is an incredibly complicated beverage. It has four times
the flavor compounds of wine," says David Latourell, who is in charge
of marketing and sales for the Seattle-based The Coffee Equipment
Company. "This takes a very simple brewing process, speeds it up and
controls quality. Coffee is brewed individually, one cup at a time,
exactly the way it should be brewed."
