Article: Vegetable lasagna recipe hits the spot

Don Pehlke of Bloomington said State Farm cafeteria served a vegetable lasagna that was very good, but he's been unable to come up with the recipe. He said he's pretty sure it had spinach in it, and he is hoping a Roundup reader can help out.

A State Farm Retiree writes that "Stouffer's brand of vegetable lasagna in the freezer section of most local groceries, is the closest I've found."

However, Jean Bright of Bellflower sent the following recipe, which she says is "very good!" Perhaps it is the "lost" recipe.

VEGGIE CHEESE LASAGNA

1 T plus 1 tsp. margarine

3 cups thinly sliced mushrooms

1 T plus 1 tsp. olive oil

1 cup chopped onions

2 garlic cloves, minced

1 1/2 cups tomato sauce
