Jane Brayer of Ellsworth ask if readers could help her find a
recipe for made-from-scratch Butterscotch Cream Meringue Pie. Ann
Margaret Mowery of Fairbury and Barbara Lyons of Green Valley were
glad to send their recipes. Mrs. Mowery's recipe is printed first.
She said is was a recipe used by her late sister.
BUTTERSCOTCH PIE
3 tablespoons butter
3/4 cup brown sugar
2 1/4 cup milk
1/3 cup flour
1/8 teaspoon salt
3 egg yolks, beaten
1 teaspoon vanilla
Heat butter and sugar over low heat or in a double boiler until
well blended. (The longer it is cooked the more butterscotch it
becomes.) Add 2 cups scalded milk and cook over boiling water until
sugar is dissolved.
