NORMAL - Lunkers in Normal knows its business when it comes to
making a fish sandwich.
Its just a fish sandwich. How can you mess that up? Plenty of
ways.
Having made thousands of exquisite pieces of fried cod in my
lifetime - and more than a few lousy ones - I am in a position to
judge. (Street cred: Junior year in high school, I was a cook at a
Long John Silvers. Thus, I speak with expertise on fried fish, and I
used to have the burn scars to prove it.)
My cod sandwich at Lunkers was delivered in a basket with fries.
1. The check of the bun. The bottom of the bun had some oil. Thats
the work of gravity as oil works its way from the fillet downward.
But the bun wasnt a soggy, greasy mess.
