The 1980s have been the decade of rediscovery for the goat, once
derided as the poor man's cow. Farmstead dairies have sprung up
across the country to produce dozens of varieties of goat cheeses.
Every month it seems as if a new goat cheese is being embraced by a
triumvirate of nutritionists, upscale groceries and the chefs of the
moment.
So why couldn't I find someone producing one of the hallowed
food memories from my childhood-goat milk fudge? Yard signs
advertising homemade goat milk fudge were common sightings along
