ELEGANT, DELICIOUS . . . AND AN ALTERNATIVE FOR LENT, BECAUSE IT'S
NOT REALLY CHOCOLATE
So, you're giving up chocolate for Lent. Too bad, for in an
occasion of ultimate bad timing, tomorrow is Valentine's Day, a
celebration synonymous with chocolate.
Not to worry. You can still have white chocolate, because white
chocolate isn't chocolate at all.
The U.S. government says so and, in fact, makes it illegal to call
white chocolate `chocolate.'
`That is still being battled in the courts as we speak,' says
pastry chef Elena Clement, now an instructor at Johnson & Wales
University College of Culinary Arts in Denver.
