While doing today's feature story on this page, I explored other
low-carb alternatives for Thanksgiving, turning to Splenda, now the
biggest-selling no-calorie, no-carb sweetener. It has been promoted
as acceptable for baking and comes with claims that it doesn't have
the bitter aftertaste found in other artificial sweeteners.
After testing Splenda in cranberry sauce, a pumpkin cheesecake and
a pumpkin pecan pie, I'd say forget it. You would have to be very
desperate.
The lightweight product didn't provide an acceptable texture in
the cheesecake or pie, and bitterness was dominant in the
cranberries. Most of those who sampled those dishes complained of an
unpleasant aftertaste.
