Dan Berger says that if he did only one thing on his 80-acre farm,
"it would be sugar."
By that he means turning sugar water, tapped from the trees, into
maple syrup.
"It's the best thing we produce," he says, even though in summer
he raises and sells crops of vegetables, along with his syrup, at the
Lebanon Farm market.
He is proud of his vegetables, but he is passionate about the
syrup. In his hands the uses are wide. His maple balsamic dijon salad
dressing is frequently requested for his Maple Grove Catering jobs.
But he also puts syrup to use in seasoning carrots, squash and even
green beans, balancing the sweetness with an acid. It's an ingredient
