SOUR CREAM PIE

This sour cream pie is great for a weekend treat and is equally delicious served warmed or chilled. My favourite fruit to use is frozen raspberries but boysenberries or canned peaches work just as well. If serving vegetarians check the ingredients list for a gelatine-free sour cream.

Base:

cup wholemeal flour

cup desiccated coconut

1 cup medium rolled oats

cup sunflower seeds

1 Tbsp raw or brown sugar

cup each water and oil (not olive)

Filling:

375g sour cream

2/3 cup custard ...
