New season's walnut oil from Kernelz (Cracker of A Nut) is now available, but what to do with it? Well, walnuts are good paired with beetroot and goat's cheese, and because they're seasonal partners with horseradish they are culinary partners as well.

Try this: Shredded beetroot salad with horseradish and toasted goat's cheese. It's the classic toasted goat's cheese salad updated. If you don't have access to fresh horseradish, substitute Mandy Kain's horseradish sauce. Serves 2 -4.
