Q.I was recently coaxed into trying squid for the first time. To
my surprise, I liked it. Can you tell me about its nutritional
value?
A. Squid has become popular of late as people in this country
discover what those in other parts of the world, especially the
Mediterranean and the Orient, have known for years. Beneath its
unglamorous appearance lies a very tasty fish or, more correctly,
shellfish. Squid is actually a mollusk. What had once been a shell
has evolved into an internal cartilage which, because of its shape,
is called a "pen" or "quill."
Nutritionally, it is high in protein and low in calories. Four
ounces of raw squid contain only 95 calories and more than 18 grams
