Cheese is chic.
No one's better aware of that than John and Betsy Williams, owners
of Say Cheese in downtown Roanoke.
The couple opened their shop of artisanal cheeses and gourmet
foods in the fall, leading the local front in what foodie types are
calling a cheese revolution.
"It's a little scary," says Betsy Williams.
But like good revolutionaries, the couple are no strangers to
risk. The Williamses opened their restaurant, Billy's Ritz, before a
revitalized Roanoke City Market area was a sure thing ("Fort Apache
in downtown Roanoke," says John). Billy's Ritz, now a downtown
fixture, turns 25 on St. Patrick's Day.
The cheese shop adjoins the restaurant and has its own entrance on
Salem ...
