Can there ever have been a more maligned meat than pork? It's perceived to be tough and fatty, laden with cholesterol and guaranteed to give you heart failure if you overindulge - just think of all those poor unfortunates branded "a bit of a porker".

But in fact this image could hardly be further from the truth. The average lean cut of pork has a fat content of less than five per cent - and half of that is unsaturated. (Lean meat in general is a healthy option - it contains a mere tenth of the fat found in cheddar cheese.)
