a 3cm-thick fillet steak

(weighing about 100g)

sea salt

pepper

olive oil

butter

Heat a heavy-based pan until extremely hot and add a little olive oil. Just before you're ready to start frying the steak, season it with freshly ground pepper and some sea salt.
