Understand the basics before baking cookies

Is there anyone out there who doesn't like cookies, especially during winter holidays? Most of us never outgrow our love of homebaked cookies.

Understanding a few baking principles and ingredient characteristics can help you make cookies of the highest quality. There are six basic types of cookies:

1. Rolled cookies made from dough rolled in a thin layer and then cut with a cookie cutter.

2. Dropped cookies made from stiff batter that is dropped from a spoon onto a baking sheet.

3. Bar cookies made from cake-type mixture baked in a thin sheet and then cut into bars.

4. Pressed cookies made from extra rich, stiff dough that is pressed through a cookie press in various shapes.
