Work ahead: Buy a small picnic ham and grind it in a meat grinder
with the fine attachment or carefully pulse the meat in a food
processor until it is finely chopped. Store in an airtight container
in the refrigerator until ready to use.
To serve: Let the pie cool for a bit, then serve it warm or at
room temperature. Refrigerate any leftovers.
Serves: 4
For the dough:
21/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon instant yeast
1 tablespoon sugar
2 tablespoons olive oil
3/4 cup warm water

6 large eggs
1/2 pound ham
3 ounces ricotta cheese
2 tablespoons grated Parmesan
